Organizers share Apple Festival recipes

For the first time, the Apple Festival will feature a cookbook for sale, which features 299 pages of recipes and different ways to use apples in everyday living.

Below are a few of the recipes. The cookbook will be on sale at the festival for $15.

Apple crisp in microwave

6 apples, sliced and peeled.

1 teaspoon cinnamon

1 tablespoon water

1 teaspoon lemon juice

1 cup rolled oats

3/4 cup all purpose flour

3/4 cup packed brown sugar

1/2 cup margarine, softened

Place apples in 2 quart square, microwave-safe dish. Sprinkle with cinnamon, water and lemon juice. Combine remaining ingredients, mix until crumbly. Sprinkle over apples.

Microwave on high for 12 to14 minutes or until apples are tender.

Rotate dish one-quarter turn once during cooking.

Fat-free, sugar-free apple crisp

9 baking apples

2 cups water

1 cup sugar substitute

1/4 cup cornstarch

1/2 cup water

1 teaspoon cinnamon

Topping:

3/4 cup flour

3/4 cup quick oatmeal

3/4 cup sugar substitute

1 teaspoon cinnamon

1/4 cup butter spray

Peel, core and slice apples into an 8×13 inch pan. Sprinkle with cinnamon. Place water in a saucepan to heat.

Mix cornstarch into 1/2 cup cold water. Pour into hot water, stirring while mixing together.

Cook until thick. Add one cup sugar substitute to hot mixture, then pour over apples in baking pan. Mix together.

For topping, mix together ingredients until crumbs form. Place on top of apples.Bake at 350 degrees for 35 to 40 minutes. Eat warm with fat free ice cream or light Cool Whip topping.

Apple pancakes

Heat a heavy griddle on medium high. Measure the following ingredients into a medium bowl.

2 cups flour

1 tablespoon baking powder

1 tablespoon honey

2 tablespoons oil

2 cups milk

1 apple, peeled and chopped

Stir together. The batter will be lumpy. Pour onto hot griddle, it will be ready to turn over when bubbles appear on top.

If it browns too fast, lower the heat. Cover the pancakes with a clean dish towel to keep warm until serving.

Caramel apple crunch cake

1 1/2 cups cooking oil

3 eggs

2 cups sugar

2 teaspoons vanilla

3 cups of flour

1 1/2 teaspoons baking soda

1 teaspoon salt

1 cup chopped walnuts

1 cup coconut

3 cups chopped apples

Pre-heat oven to 350 degrees. Combine oil, eggs, sugar and vanilla in the bowl. Add flour, baking soda and salt. Mix well. Stir in walnuts, coconut and apples. Pour into greased pan.

Icing:

1 stick (1/2 cup) butter

1 cup brown sugar

1/4 cup milk.

Boil butter, brown sugar and milk in saucepan for 2 1/2 minutes. Pour icing over cake while still hot. Leave cake in pan until cool, then place on plate.
